Classic Kunafa (Künefe)

A Middle Eastern classic featuring crispy shredded kataifi pastry layered with gooey melted cheese and soaked in aromatic syrup. Garnished with crushed pistachios, this dessert is best served warm for a perfect stretchy texture.
Chef’s Tip: For extra crispiness, cook on low heat on the stovetop instead of baking.


Ingredients

  • 250g Eastanbul Dried & Shreded Kataifi
  • 100g unsalted butter, melted
  • 300g unsalted fresh cheese or shredded mozzarella
  • 1/2 cup crushed pistachios (for garnish)
  • 1 cup sugar
  • 1/2 cup water
  • 1 tsp lemon juice
  • 1 tbsp rose or orange blossom water (optional)


Directions

  1. In a saucepan, combine sugar and water. Bring to a boil, then lower heat and simmer for 10 minutes. Add lemon juice and optional rose or orange blossom water. Set aside to cool.
  2. Place shredded kataifi in a large bowl and separate into small strands. Pour melted butter over and mix until well coated.
  3. In a greased baking pan, press half of the buttered kataifi to form an even layer.
  4. Spread shredded cheese evenly over the kataifi base.
  5. Cover with the remaining kataifi and press down gently to secure the layers.
  6. Bake in a preheated oven at 180°C (350°F) for 20–25 minutes until golden and crisp.
  7. Remove from oven and immediately pour cooled syrup over the hot kunafa. Let it rest for a few minutes.
  8. Garnish with crushed pistachios and serve warm.
