This creamy, smooth hummus gets its nutty richness from Eastanbul Tahini and a tangy finish from a sprinkle of Eastanbul Sumac. A timeless Middle Eastern dip perfect for mezze platters, sandwiches, or as a healthy snack.
Chef’s Tip: Use ice-cold water to help emulsify the tahini for a smoother texture.
Ingredients
- 1½ cups cooked chickpeas (or 1 can, drained and rinsed)
- 1/4 cup Eastanbul Tahini
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil (plus extra for topping)
- 1 clove garlic (minced)
- 3–4 tbsp cold water (as needed for texture)
- 1/2 tsp salt
- 1/2 tsp Eastanbul Sumac (plus more for garnish)
- Optional: a few reserved chickpeas, parsley, sesame seeds for topping
Directions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and salt.
- Blend until thick and slightly chunky, then slowly add cold water, 1 tablespoon at a time.
- Continue blending until the hummus becomes smooth and creamy. Adjust salt and lemon to taste.
- Transfer to a serving bowl and swirl the surface with a spoon.
- Drizzle with olive oil, sprinkle with Eastanbul Sumac, and garnish with extra chickpeas or sesame seeds if desired.
- Serve with warm pita, raw veggies, or as part of a mezze board.
