Fresh, tangy, and bursting with flavor, this Fattoush Salad is a Mediterranean classic that turns simple vegetables into a vibrant feast. Crispy pita chips, juicy tomatoes, crunchy cucumbers, and fragrant herbs come together with a zesty sumac dressing that makes every bite irresistible.
Chef’s Tip: For extra crunch, fry the pita chips in olive oil instead of baking. Add a sprinkle of Eastanbul Za’atar on top of the chips for an herby twist.
Ingredients
- 2 pieces pita bread, cut into small squares
- 3 tbsp olive oil (divided)
- 1 tsp Eastanbul Sumac

1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 4 radishes, thinly sliced
- ½ red onion, thinly sliced
- ½ cup fresh parsley and mint leaves, chopped
For the Dressing:
Directions
- Preheat oven to 375°F (190°C).
- Toss pita squares with 2 tbsp olive oil and bake for 8–10 minutes, until golden and crispy.
- In a large salad bowl, combine romaine lettuce, tomatoes, cucumber, radishes, onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses, sumac, salt, and black pepper.
- Pour the dressing over the vegetables and toss well to coat.
- Top with crispy pita chips and sprinkle extra sumac for a zesty finish.
