Za’atar Flatbread (Manakish)

A classic Levantine flatbread generously topped with a fragrant blend of za’atar, olive oil, and sesame seeds. Crispy on the edges and soft in the center, it’s perfect for breakfast, snacks, or alongside mezze.
Chef’s Tip: Use a pizza stone or preheated baking tray for an extra crispy bottom.

  1. In a bowl, combine flour, yeast, and salt. Gradually add warm water and olive oil.
  2. Knead until a soft, smooth dough forms (about 5–6 minutes).
  3. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat oven to 220°C (430°F). Place a baking sheet or stone inside to heat.
  5. Mix Eastanbul Green Za’atar Seasoning with olive oil to create a paste.
  6. Divide the dough into 4 equal pieces. Roll each one into a flat circle (about 1/4 inch thick).
  7. Spread the za’atar paste evenly over each flatbread, leaving a small border.
  8. Transfer to the preheated tray or stone and bake for 10–12 minutes, or until golden and crisp.
  9. Serve warm with labneh, olives, or sliced vegetables.
