Apricot Oat Energy Bites

These no-bake energy bites are naturally sweetened with dried apricots and balanced with oats, coconut, and a hint of cinnamon. Perfect for a midday snack or a post-workout boost, they’re quick to make and easy to love.

Chef’s Tip: For a smoother texture, soak the dried apricots in warm water for 5–10 minutes before blending.

Directions

  1. Soak apricots in warm water for 5–10 minutes until soft, then drain.
  2. Add oats, shredded coconut, and nuts to a food processor. Pulse until finely chopped.
  3. Add the soaked apricots, honey, coconut oil, cinnamon, and salt. Process until a sticky dough forms.
  4. If needed, add a teaspoon or two of water to help the mixture bind.
  5. Scoop out the mixture and roll into bite-sized balls using your hands.
  6. Place on a tray and refrigerate for 20–30 minutes until firm.
  7. Garnish with mint leaves before serving, if desired.
  8. Store in an airtight container in the refrigerator for up to 1 week.
