Classic Turkish Köfte (Meat Patties)

Simple, juicy, and full of flavor, these Turkish-style meat patties—known as köfte—are seasoned with warm spices and Aleppo pepper flakes for a mild kick. Serve with grilled vegetables and ayran.
Chef’s Tip: For extra tender köfte, let the mixture rest overnight in the fridge to allow the flavors to fully develop and the texture to improve.

  1. In a bowl, soak the bread in water for a few seconds, then squeeze out excess and crumble.
  2. Combine ground beef, onion, garlic, crumbled bread, egg, olive oil, and all the spices including Aleppo pepper flakes.
  3. Mix thoroughly by hand until the mixture is smooth and sticky.
  4. Shape into small oval patties using damp hands.
  5. Let the patties rest in the fridge for 20–30 minutes.
  6. Heat a grill pan or skillet over medium heat.
  7. Cook patties for 4–5 minutes per side until browned and cooked through.
  8. Grill sliced tomatoes and green peppers in the same pan.
  9. Serve warm with vegetables and ayran or pita.
