- Heat olive oil in a large pot over medium heat. Add onion and bell pepper, sauté until softened.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in garlic, tomato paste, paprika, Aleppo pepper, salt, and pepper. Cook for 1–2 minutes.
- Add tomatoes, beans, corn, and water or broth. Mix thoroughly.
- Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes.
- Stir occasionally. Add more water if too thick. Adjust seasoning to taste.
- Let rest 10 minutes before serving.
- Garnish with cilantro, lime wedges, or chili slices if desired.
