Mediterranean Salad with Pomegranate Molasses Dressing

A refreshing and vibrant salad that brings together crisp lettuce, juicy tomatoes, cucumbers, briny olives, and creamy feta, all tied together with a tangy-sweet Eastanbul Pomegranate Molasses dressing. Perfect as a light lunch or a side dish.

Chef’s Tip: For added flavor, let the salad sit for 10 minutes before serving so the dressing can soak into the vegetables.


Ingredients

  • 4–5 large lettuce leaves, chopped
  • 1/2 cucumber, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup black olives or Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 tsp Eastanbul Zaatar  (optional for garnish)
  • 2 tbsp Eastanbul Pomegranate Molasses
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste


Directions

  1. In a large bowl, combine the lettuce, cucumber, tomatoes, red onion, and olives.
  2. In a small jar or bowl, whisk together pomegranate molasses, olive oil, lemon juice, salt, and pepper until well emulsified.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with crumbled feta and a pinch of za’atar if desired.
  5. Serve immediately with warm flatbread or toasted sourdough.
